Easy Sesame Noodle Stir Fry


I created a lot of new recipes in last week’s client meals, and I’m super excited to share them with the world after receiving such great feedback. So here is the first of the influx of recipes - the quickest and most delicious noodle stir fry. It legitimately takes 15 minutes to make, and is extremely customizable if you’re missing an ingredient or something doesn’t work right for you. Try out different veggies, rice instead of noodles, and other alternatives for ingredients that don’t work for you.

It’s just like takeout, but without the cost, time, and fact that you have to leave the house.

RECIPE:

Ingredients:

  • 1 bag of brown rice noodles or noodles of choice (I used these)

  • 1 tbsp sesame oil

  • 1 tbsp fresh grated ginger

  • 4 minced garlic cloves

  • 2 chopped large carrots 

  • 1 sliced red bell pepper 

  • 1 chopped zucchini 

  • ⅔ cup vegetable broth 

  • ¼ cup coconut aminos (sub soy sauce or alternative) 

  • 1 tbsp apple cider vinegar

  • 1 tbsp sesame seeds 

  • 2 tbsp maple syrup 

  • 1 tbsp arrowroot powder (sub cornstarch) 

  • 2 tbsp creamy nut or seed butter (optional, but adds creaminess) 

  • Red pepper flakes

  • Salt & pepper 

  • Green onion & sesame seeds to top

  • Optional protein of choice

    Directions:

  1. Cook noodles according to package instructions, the drain and set aside.

  2. Heat oil in a pan and add ginger and garlic, cooking until fragrant. Add veggies and saute for a few minutes or until soft. 

  3. Combine remaining ingredients except peanut butter and spices, and whisk until smooth. Pour into the pan and let simmer for a few minutes. 

  4. Stir in noodles, peanut butter, and spices and cook for another few minutes to incorporate flavors. Top with green onion and sesame seeds.
