Chocolate Chunk Zucchini Brownies


the most nutritious brownies you will ever eat!

They’re fudgy and delicious, but filled with tons of nutrients and no sugar. This was my first time ever baking with zucchini, and it turned out a great success. It adds an amazing gooey texture to baked goods, and you can’t taste it whatsoever. This recipe is also filled with breakfast-y ingredients, so they can also be enjoyed with your morning cup of coffee without the risk of the post-sugar slump. I used monkfruit sugar to keep it entirely sugar free, but feel free to use coconut to still make it low glycemic.

Zucchinis are at their peak right now, so it’s the perfect and most cost effective time to experiment with different ways to use them. This also technically means that these brownies are seasonal, which has endless benefits for overall health. So head to the store or local farmers market, grab a few massive zucchinis, and make these brownies!

 

RECIPE

Ingredients:

  • 2 flax eggs: 2 tbsp ground flaxseed mixed with 5 tbsp water

  • 2/3 cup coconut or monkfruit sugar for sugar free

  • 1 cup grated zucchini 

  • 1/2 cup unsweetened applesauce 

  • 1/4 cup melted vegan butter 

  • “Buttermilk”: 2 tbsp plant milk mixed with 1 tsp apple cider vinegar 

  • 1 tbsp vanilla extract 

  • 1 1/4 cup gluten free oat flour (either buy or make your own by blending oats)

  • 1/4 cup cacao powder

  • 1 tsp baking powder

  • 1/2 tsp baking soda 

  • 100% dark chocolate bar chopped into chunks 

Directions:

  • Prep your flax eggs and let sit for a few minutes until thick. Combine sugar and flax eggs in a bowl until smooth. Squeeze and drain zucchini to remove all moisture, then add to the bowl. Mix in applesauce, butter, milk, and vanilla and continue to mix until fully combined. 

  • Stir in flour and cacao powder and gently mix until no clumps remain, then add baking soda, baking powder, and chocolate. 

  • Spread batter evenly across a small square pan and top with more chocolate. Bake at 350 for 35-40 minutes or until cooked through. Top with a drizzle of melted chocolate and additional chocolate chunks if desired. Let sit to cool completely before slicing.
