Creamy Greens Pasta
Hot take: pasta is an underrated work week lunch, or maybe i’m just late to the game. Either way, it’s definitely the way to go, especially in the winter when you’re short on time but still need a nourishing and warming meal. If you often find yourself crashing mid-afternoon, eating a well-balanced plate of protein, carbs and fats for lunch is essential for sustained energy.
And that is where this insanely dreamy pasta comes to the rescue. It tastes like a damn 5 star meal, but takes almost no time to make. I used my homemade pesto for this, but you can use any recipe or your favorite store bought. It’s delicious, nutritious, and so simple to make. What more could you ask for?!

RECIPE:
Ingredients:
1 box pasta of choice (I used Jovial Foods but also love Trader Joe’s brown rice)
1/2 cup pesto of choice (I used my homemade easy vegan pesto)
3 heaping tbsp dairy-free yogurt of choice (opt for a thick one, I used Kite Hill’s!)
2 tbsp olive oil
Nutritional yeast (optional, but adds a creamy and cheesy flavor)
Salt & pepper
Optional: greens of choice (I used arugula)
Directions:
Cook pasta according to package instructions. Save 2-3 tbsp of the water for the sauce.
Heat pesto, olive oil, pasta water, and nutritional yeast over medium/high heat for about 5 minutes, or until sauce starts to bubble and thicken.
Lower the heat, add your pasta and yogurt, and stir to fully combine. Stir in greens if using, and mix until they start to wilt.
Serve and devour!
