Easy Lentil Meatballs

I’ve actually never made my own veggie meatballs or burgers until this recipe, and was seriously so impressed with how they turned out.

They sound a lot more complicated than they actually are - they were so easy to make and came together in under 30 minutes. They’re also incredibly flavorful and no joke, they taste like actual meatballs. If you’re dabbling with plant based eating, this is definitely a recipe to try out. Throw them on your favorite pasta or grain of choice, add them to a salad, or pop em in your mouth for a quick fiber and protein filled snack. Either way, you can’t go wrong.

RECIPE:

Ingredients:

  • 1/2 cup green lentils

  • 1 1/2 cups veggie broth or water

  • 1 flax egg: 1 tbsp ground flaxseed + 2 tbsp water

  • 2 tbsp coconut flour

  • 4 tbsp nutritional yeast or vegan parmesan

  • 3 tbsp green onion

  • 2 tbsp olive oil

  • Italian seasoning

  • Salt & pepper

  • Optional: hot sauce/siracha for an extra kick

Directions:

  • Cook lentils according to package instructions in veggie broth. Let cool completely.

  • Add cooked and cooled lentils and remaining ingredients to a food processor or blender. Blend until mostly combined, leaving a few chunks. Add more flour if the mixture is too wet, or more oil if too dry.

  • Form into 12 even sized meatballs and add to a pan with more oil. Cook for a few minutes, flipping to brown each side.

  • Add to a baking sheet and bake at 375 for 15 minutes. Serve with pasta of choice.
