Gut Lovin’ Chocolate Chip Cookies


Chocolate chip cookies are medicine!!!!

Every single thing we take in, from the foods we eat to the thoughts we think to the media we consume, all play a role in our daily lives. Which is why I try to share recipes that are not only yummy, but also serve a purpose. And friendly reminder, every single food serves a purpose if you look hard enough.

I also share recipes that go along with whatever aligns with my own health at the time. Currently that’s a long list, but since gut health truly impacts every other bodily system and function, it’s never a bad idea to show it some extra love. Especially when it’s in the form of a CCC. One filled with both pre and probiotic rich foods that feed all of that good bacteria in our gut.

Which is where these cookies came from. They’re made with the intention of using food as medicine, with ingredients like dark chocolate, oats, monkfruit, and prebiotic yogurt. They’re sooo yummy, made all in just one bowl, and require no fancy equipment or specific order of ingredients to follow. They’re also vegan, gluten free, and sugar free if you use monkfruit/other plant based sweeteners - if you’re into that kinda stuff.

I also want to add a disclaimer that these cookies are great for OVERALL gut health. As someone who once fell victim to every gut health marketing trap out there, I don’t want you to think that these cookies will magically cure you. Or honestly even do anything for you. If you have SIBO or other similar imbalances in the gut, you might want to make ingredient subs to make this “less gut friendly”. Fiber and pre/probiotic rich foods are a tough one to navigate with the more chronic issues, and sometimes are too much to handle at once. Always do whatever “gut friendly” looks like for you, which also changes all of the time. But, if you’re just looking to boost your overall gut health - which then impacts your immune system, heart, brain, hormones, mood, sleep, digestion, and so much more - you’ve come to the right place…

RECIPE

Ingredients:

  • 3 tbsp melted vegan butter (sub any butter for non vegan)

  • 3-4 tbsp plant based probiotic yogurt (I used this one)

  • 1/4 cup monkfruit or coconut sugar (sub any granulated sugar)

  • 1/4 cup monkfruit brown sugar (sub regular brown sugar for non sugar free, or additional coconut sugar)

  • 1 tsp vanilla extract

  • 1 1/4 cups oat flour (sub any 1:1 gf/all purpose flour)

  • 1/2 tsp baking soda

  • Dash of salt

  • 100% dark chocolate/cacao chips (sub any vegan/df/regular choc chips)

    Directions:

  • Add all ingredients in a bowl and mix until dough forms, slowly adding more yogurt as necessary.

  • Chill dough in the fridge (or in the freezer if you’re impatient like me) until completely cooled. Remove and roll into even sized balls and place on a baking sheet.

  • Bake at 325 for 10 minutes, and top with more chocolate chips & sea salt. Let cool completely to allow them to firm up.
