The “Best Ever” Lentil and White Bean Soup
The name of this recipe was inspired by a client, who used those exact words to describe the soup after taking her first bite. It’s incredibly simple to make, nourishing, and delicious, and is the perfect grounding recipe to warm you from the inside out. For an added bonus, it’s the easiest way to eat in alignment with the colder seasons to create balance within the body.

RECIPE:
Ingredients:
1/4 cup olive oil
1 chopped white onion
1/3 cup chopped carrots
4 garlic cloves
2 tsp cumin
1 tsp curry powder
1/2 tsp thyme
1 can diced tomatoes
1 can white beans
1 cup lentils (I did green)
4 cups veggie broth
2 cups water
Salt and pepper
Red pepper flakes
1 bag of arugula or greens of choice
1 bag arugula or greens of choice
Fresh squeezed lemon juice
Directions:
Cook onion, carrots, garlic, cumin, curry powder, and thyme in oil in a large pot over medium heat for about 5 minutes, or until onions are soft.
Pour in tomatoes, stir, and continue to cook for a few more minutes.
Pour in beans, lentils, veggie broth, water, salt & pepper, and red pepper flakes. Increase the heat and bring to a boil.
Reduce heat, cover slightly, and cook for 30 min or until lentils are cooked.
Blend 2 cups of the soup until completely smooth, pour back into the pot.
Stir in greens, lemon juice, and red pepper flakes. Mix until greens are soft.
Serve and enjoy!
