The BEST EVER Vegan and Gluten Free Chocolate Chunk Cookies


You will never need another vegan chocolate chip cookie recipe again.

These cookies are not only absolutely delicious, but also vegan, gluten and refined sugar free, and allergen friendly! They can enjoyed by people with basically every dietary need, so they’re great to make for a crowd or bring to a social gathering. They’re also incredibly easy to make, and even easier to clean since they’re made all in one bowl. I used oat flour to add for a little bit of extra plant based protein and fiber, but I’m assuming that any 1:1 gluten free flour will work. I also used coconut sugar because that’s what I had on hand, but monkfruit would also work to keep them entirely sugar free.

This is one of those recipes that you’d never guess is made with more nutrient dense ingredient subs, so give them a shot because I promise you won’t regret it.

RECIPE

Ingredients:

  • 1 tbsp flaxseed meal

  • 3 tbsp plant milk or water

  • 3/4 cup coconut sugar

  • 1/3 cup melted coconut oil

  • 2 tsp vanilla extract

  • 2 1/4 cups gluten free oat flour

  • 1/2 tsp baking soda

  • 1 dark chocolate bar chopped into chunks

Directions:

  • Mix flaxseed, milk, sugar, oil, and vanilla in a bowl until smooth and creamy. Slowly fold in flour and baking soda and combine until a dough forms. Stir in chocolate chips, cover, and refrigerate for at least 1 hour.

  • Let dough sit out for a minute to soften, then scoop into even sized balls and line across a baking sheet. Bake at 350 for 10-11 minutes. Let cool completely before removing - they will be really chocolate-y on the inside so make sure they have a chance to firm up.
