Chewy Oatmeal Chocolate Chunk Cookies


These cookies are incredible. They taste like a warm and cozy hug, and you would never guess that they’re made with more nutrient-dense ingredient subs. If you’re a fan of the classic chewy oatmeal chocolate chip cookie, these ones are for you.

Make them ASAP!

RECIPE:

Ingredients:

1/2 cup softened coconut oil
1/2 cup coconut sugar
1 egg
1 tsp vanilla
1 1/2 cups gluten free oats
1 cup oat flour (I just blended my oats!)
1 tbsp cinnamon
1/2 tsp baking soda
1/4 tsp salt

Directions:

  1. Using a hand mixer, beat together oil and both sugars until fully combined. Then, beat in egg and vanilla.

  2. Combine oats, oat flour, cinnamon, baking soda, and salt in a separate bowl. Pour over wet ingredients and mix until combined.

  3. Refrigerate dough for at least 30 minutes, remove and stir in chocolate chunks.

  4. Roll dough into 15 balls, flatten slightly, and top with more chocolate.

  5. Bake at 350 for 12 minutes.

    Top with sea salt and ENJOY!
