Copycat Purely Elizabeth Granola - Grain-Free Recipe!

If you’re an OG tasteswithgrayce follower, you know my dedication to the clustery granola game. You also probably know that my absolute favorite brand of granola is Purely Elizabeth, because every flavor is absolutely amazing and is made with equally amazing ingredients. One of the first recipes I posted on my Instagram was my DIY Purely Elizabeth Original flavor, so I decided to try out another using one of her grain free flavors. And let me tell you, it does not disappoint. So much so that the entire batch was gone in a day,
So if you’re also a huge fan her Grain-Free flavors, you need to make this one ASAP. Same ingredients, same taste, same clustery goodness.
If it’s gone in a day, don’t say I didn’t warn you...
RECIPE
Ingredients:
Chia egg: 1 tbsp chia seeds + 2 tbsp warm water
2 cups chopped raw mixed nuts (I finely chopped 1 cup and loosely chopped the rest)
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
3 tbsp hemp seeds
1/4 cup almond flour
1/4 cup unsweetened coconut flakes
1 tbsp cinnamon
1/2 tsp sea salt
2 tbsp melted coconut oil
3 tbsp maple syrup
1 tsp vanilla extract
Directions:
Make chia egg and set aside to thicken.
Combine cashews, seeds, coconut, salt, and cinnamon in a large bowl.
Combine coconut oil, maple syrup, and vanilla in another bowl.
Pour oil mixture over nut and seed mixture and mix. Add chia egg and continue to stir until fully coated.
Pour and flatten mixture on a baking sheet and bake at 325 for 20 minutes.
Let cool completely (this is the hardest part) and break into large clusters!
Variations: I have also used this recipe to recreate the Coconut Cashew Grain-Free granola. Same recipe as above, but replace the mixed nuts with raw cashews and add unsweetened coconut flakes!
