Copycat Purely Elizabeth Granola - Original Recipe!
Where my Purely Elizabeth lovers at?!
As a self proclaimed granola addict, this recipe is one of my all-time favorites. It tastes identical to the OG Purely Elizabeth recipe, but doesn’t break the bank. If you’ve ever tried Purely Elizabeth’s granola, you know how incredible it tastes. You also probably know how expensive it is.
So the next time you find yourself at the Whole Foods checkout having an internal crisis of whether or not to pull the trigger and spend $8 on a bag, come back to this recipe and make it at home!
RECIPE
Ingredients:
Chia egg (1 tbsp chia seeds + 2 tbsp water)
1/3 cup coconut oil
1/4 cup coconut sugar
3 tbsp maple syrup
1 tsp vanilla
1 1/2 cup gluten free oats
1’/2 cup uncooked quinoa
3 tbsp chia seeds
1/4 cup flaxseed
Cinnamon
Directions:
Make chia egg and set aside to thicken.
Heat coconut oil, coconut sugar, maple syrup, and vanilla over the stove until fully melted.
Combine oats and quinoa in a large bowl. Blend half of the mixture until it reaches a flour consistency, then add back to the bowl.
Pour oil mixture into the bowl and stir to combine. Add chia seeds, flaxseed, and chia egg and continue to mix until fully incorporated.
Spread mixture completely flat on a large baking tray (important: you want it to cook evenly). Bake at 300 for 30-40 minutes, shaking every 10 minutes.
Let cool completely (this is the hardest part) and break into large clusters!
