Creamy One-Pot Truffle Pasta


Not sure what takes longer - making this pasta or cleaning up afterwards. Truly nothing beats a one-pot meal, especially when it tastes like something you would order from a restaurant. Oh, and add some truffle to it, game over.

This is another great recipe to make in batch and store in the fridge for an easy lunch or dinner throughout the week. Especially if you’re short on time but still want a nutritious and delicious meal, this is definitely the way to go.

RECIPE:

Ingredients:
1 box of pasta of choice (I love Trader Joe’s brown rice pasta or Jovial Foods!)
1 can full-fat canned coconut milk, including the cream
1/2 cup chopped mushrooms
1 tbsp truffle powder seasoning (again, Trader Joes for the win)
2 tbsp olive oil
3 tbsp nutritional yeast (optional, adds a cheesy flavor)
Salt & pepper

Directions:

  1. Cook mushrooms in a pan or pot with olive until for 2-3 minutes or until soft.

  2. Pour in coconut milk, truffle powder, and salt & pepper and mix to combine. Then, add uncooked pasta and stir.

  3. Cover the pot with a lid and cook over medium heat for 15 minutes, or until pasta is cooked and coconut milk is absorbed.

  4. Remove lid and stir in nutritional yeast if using. Continue to cook if necessary, or until pasta is nice and creamy.
