Easy Vegan Pesto - Secretly Loaded with Nutrients!


One of my go-to recipes to prep in a big batch and store in the fridge or freezer. I love this pesto because it’s so flavorful, so versatile, and packed with amazing nutrient-dense ingredients. Especially for those who are new to eating more whole food sources, this recipe is a great way to dip your toes in by sneaking in some of those incredible essential nutrients that our bodies love. For those who are veterans in the plant-based world, this recipe is similar to Trader Joe’s Vegan Pesto, but nut-free and much more cost effective!

I love using this on pasta, in a veggie scramble, or as a topping for a grain bowl. It takes about 5 seconds to make, so you really have no excuses not to try it.

RECIPE:

Ingredients:
3 cups arugula (sub spinach or kale, or go crazy and mix all three)
1/2 cup fresh basil
1/3 cup raw sunflower seeds
1/4 cup nutritional yeast
1/3 cup olive oil
Crushed red pepper flakes (depending on your taste preference)
Salt & pepper to taste

Directions:

  1. Combine ingredients in a food processor or blender, adding more olive oil as necessary.

Yep, that’s it. Doesn’t get much easier than that!
