Blueberry Spinach Summer Salad with Sweet Balsamic Dressing
Another easy and delicious summer salad!
RECIPE:
Ingredients:
2 bags of baby spinach
1/2 container of fresh blueberries
1/2 cup pecans
1/2 cup vegan mozzarella cheese
1-2 avocados to serve
Dressing
1/4 cup olive oil
2 tbsp balsamic vinegar
3 tbsp maple syrup
Juice of 1/2 small lemon
Water to thin
Salt & pepper to taste
Directions:
Mix dressing ingredients in a small bowl or mason jar. Toast pecans in the oven at 350 for 5 minutes or until toasted. Add spinach, blueberries, pecans, and cheese to a large salad bowl.
When ready to serve, pour dressing on top and mix until the entire salad is coated. Top with avocado.
