Blueberry Spinach Summer Salad with Sweet Balsamic Dressing


Another easy and delicious summer salad!

 

RECIPE:

Ingredients:

  • 2 bags of baby spinach

  • 1/2 container of fresh blueberries

  • 1/2 cup pecans

  • 1/2 cup vegan mozzarella cheese

  • 1-2 avocados to serve

  • Dressing

    • 1/4 cup olive oil

    • 2 tbsp balsamic vinegar

    • 3 tbsp maple syrup

    • Juice of 1/2 small lemon

    • Water to thin

    • Salt & pepper to taste

Directions:

  1. Mix dressing ingredients in a small bowl or mason jar. Toast pecans in the oven at 350 for 5 minutes or until toasted. Add spinach, blueberries, pecans, and cheese to a large salad bowl.

  2. When ready to serve, pour dressing on top and mix until the entire salad is coated. Top with avocado.
