Funfetti Cake Bars


The rainbow sprinkle recipes never stop!

If you’re a fan of the OG Funfetti Cake boxed mix, this ones for you. They’re gluten free, vegan, and refined sugar free - aside from the sprinkles….but a little sugar is good for the soul.

So if you have a birthday coming up, or are just looking to celebrate another beautiful day on this earth, make these ASAP!

 

RECIPE

Ingredients:

  • 1/3 cup melted coconut oil

  • 1/4 cup maple syrup

  • 1 flax egg or regular egg for non-vegan (both work!)

  • 1/2 tsp almond extract

  • 1 1/2 cups oat flour (either buy or blend GF oats)

  • 1/2 cup almond flour

  • 1 tsp baking powder

  • Endless rainbow sprinkles (I used these to keep GF and vegan, added bonus of no artificial dyes!)

Directions:

  1. Whisk oil, syrup, egg, and almond extract in a bowl until smooth.

  2. Fold in flours and baking powder and continue to mix until fully incorporated. Then, stir in sprinkles and mix lightly - be careful not to overmix.

  3. Pour batter into an 8x8 pan, top with extra rainbow sprinkles, and bake at 350 for 18 minutes, or until a toothpick comes out clean.

  4. Let cool completely and top with frosting if using - highly recommend Simple Mills if you’re sticking to GF/vegan/natural route.
