Lemon Glazed Cookies
Just like a delicious glazed donut, but in cookie form.
These lemon glazed cookies are soft and fluffy, so simple to make, and incredibly yummy. They’re made all in one bowl with only a few ingredients, and come together in almost no time. I used monkfruit sugar to keep these entirely sugar free, but feel free to sub any granulated and powdered sweeteners. They’re a perfect summer treat that anyone can enjoy since they are also allergen friendly.

RECIPE
Ingredients:
1/4 cup softened vegan butter
1/2 cup monkfruit or coconut sugar (sub any granulated sugar)
1 tbsp fresh squeezed lemon juice
1 tbsp fresh lemon zest
1 cup 1:1 gluten free baking flour (sub any 1:1 flour)
1 tsp baking soda
1/2 tsp almond extract
Splash of coconut milk
Glaze: Whisk together powdered monkfruit (or powdered sugar), a little lemon juice, and coconut milk in a shallow bowl until thin
Directions:Using a hand mixer, cream together butter and sugar in a large bowl until smooth. Mix in remaining ingredients just until dough forms, adding coconut milk if necessary.
Refrigerate the dough for 5-10 minutes, then roll into even sized balls - they spread a little so not too close together. Bake at 350 for 8-10 minutes.
Let cool completely before dipping each in the glaze 1-2 times.
