Lemon & White Chocolate Bars


I love to share the “why” behind some of my recipes. I think it’s really freaking cool that everything we consume plays a specific role in both our bodies and minds, which goes beyond the foods we eat.

Lately I’ve been interested in immune health, so my recipes have been starting to reflect that. As the seasons begin to change, keeping a healthy immune system is something to be especially mindful of. And since I just posted a recipe for a delicious entree that also doubles as an immune booster, I had to do the same for a baked good.

Cue these lemon and white chocolate bars - not only are they delicious, but they’re also filled with Vitamin C, an essential nutrient for supporting the immune system.

Here are a few reasons why Vitamin C should be your new BFF:

  • For the mind: Protects brain cells from free radicals throughout the body, reduces inflammation and oxidative stress in the brain, aids in the process of maintaining neural connections and pathways, works with cells in the body to properly use various neurological chemicals such as dopamine

RECIPE

Ingredients:

  • “Buttermilk”: 1/3 cup coconut milk + 1/2 tsp apple cider vinegar 

  • 2 flax eggs: 2 tbsp flaxseed + 4 tbsp water

  • 2/3 cup coconut sugar 

  • 1 tsp vanilla extract

  • 1/2 cup melted vegan butter 

  • Juice of 1/2 fresh lemon 

  • 1 1/4 cup almond flour 

  • 3 tbsp coconut flour 

  • 1 tsp baking soda 

  • Vegan white chocolate bar, chopped into chunks (I used Eating Evolved, the best EVER)


Directions:

  1. Create buttermilk & flax egg mixtures in separate bowls and let sit for 5 minutes. 

  2. Using a hand mixer, combine sugar, milk, and vanilla with flax eggs. Add in coconut oil and mix until smooth.

  3. Stir in remaining ingredients and mix until fully incorporated. 

  4. Spread across an 8x8 dish and top with extra chocolate chunks.

  5. Bake at 350 for 20-25 minutes. Top with more chocolate and let cool completely before slicing into bars.
