Pesto Hummus
Forget meal prep, it’s all about dip prep!
I think dips & sauces are such an underrated part of meal prep, and really need to start getting the recognition they deserve. They’re so easy to make in big batches ahead of time and can add so much variety & flavor to the same old meals. They’re also incredibly cheaper when made homemade, and not filled with sneaky unnecessary additives that are often found in the store-bought versions.
And what are the two best dips/sauces of all time, you ask? Pesto and hummus. If you agree with that statement, you’re going to love this recipe. It has all of the creaminess of a traditional hummus, with the flavor of a fresh, homemade pesto. Enjoy it as a dip, sauce, marinade, or dressing - you really can’t go wrong. RECIPE:
Ingredients:
2 cans organic chickpeas, rinsed & drained
2 cups fresh basil
1/3 cup creamy tahini
1/4 cup aquafaba (liquid from can of chickpeas)
1/4 cup olive oil
Juice of 1 lemon
Sprinkle of nutritional yeast
Optional: garlic, red pepper flakes, salt & pepper
Directions:
Add all ingredients to a high speed food processor and pulse until thick and fully processed.
