Slutty Cookies
you’ve probably had slutty brownies before, but have you have had slutty cookies?
When you ask your friends for recipe requests and get a response of “something with oreo cookie”, you deliver. My mind was actually blown when these came out of the oven because I was honestly pretty skeptical if they would work. They are so decadent & delicious, which is why you’d never guess they’re vegan & gluten free.
I used Simple Mills sandwich cookies to meet my own dietary needs, but feel free to use whatever oreo or oreo-like cookie works best for you. I’m not going to lie, the process is a bit more tedious than the typical easy recipes I post - you have to use your hands to form the cookie dough around the sandwich cookie and it can get a little messy. But they are so worth it, I promise. If you’re able to figure out a more graceful way to make these, please let me know. I will say though, I wasn’t complaining licking the extra cookie dough off my fingers at the end.

RECIPE
Ingredients:
1/3 cup melted coconut oil
1/3 cup unsweetened applesauce
1/2 cup monkfruit or coconut sugar
1 tsp vanilla
1 1/4 cups 1:1 gluten free flour
1/2 tsp baking soda
1/2 tsp baking powder
Dark chocolate chips of choice
Simple Mills gluten free sandwich cookies
Directions:
Mix oil, applesauce, sugar, and vanilla in a bowl until smooth. Stir in all remaining ingredients except oreos and mix until a cough dough forms. Refrigerate the dough for at least 30 minutes, or until chilled and easier to work with your hands
Roll dough into 9 even sized balls, then press down with the oreos. Take another spoonful of cookie dough and place on top of the oreo, then use your hands to completely cover & seal all edges.
Bake at 350 for 12-15 minutes, or until edges are golden (mine took 14). They may seem slightly underdone, but they’ll firm up on the baking sheet. Let cool completely before removing and serving.
