Chocolate Almond Protein Granola Bars


A cross between a chewy bar & a kind bar. But higher in protein & lower in sugar!

These homemade granola bars are so delicious and seriously foolproof. They’re so easy to make and can be customized in so many different ways, so get creative and make them in whatever way satisfies your taste buds best. They’re the perfect balanced snack to prep ahead of time and store in the fridge or freezer for an easy post-workout or afternoon snack. They include all of the essential macronutrients and extra fiber, making them a yummy way to both feed the gut and keep your hormones happy.

RECIPE

Ingredients:

  • 1 1/2 cups gluten free oats

  • 1/2 cup Truvani chocolate protein powder, or any chocolate protein of choice (~2 single serve packs)

  • 1/3 cup uncooked quinoa

  • 1/4 cup ground flaxseed

  • 1/3 cup creamy almond butter

  • 1/3 cup plant milk

  • 1/4 cup maple syrup

  • 1 tsp almond extract

  • Chopped raw almonds

  • Cacao or dark chocolate chips of choice

Directions:

  • Combine oats, protein, quinoa, & flaxseed in a large bowl. Heat almond butter, milk, syrup, & almond extract over the stove or in the microwave, and stir until all ingredients are fully mixed together. Pour wet mixture over dry and mix to combine. Fold in almonds and chocolate chips, leaving some for topping.

  • Pour mixture into a square pan and flatten completely with a spatula. Top with extra almonds & chocolate and bake at 350 for 20-25 minutes, or until golden. Let cool completely before slicing into bars. Store in an airtight container in the fridge, or freeze for longer term.
