The BEST Vegan Lemon Loaf


When life gives you lemons, give them back. Because what kind of gift is a lemon?

Nothing like some cringe-worthy humor to brighten your day! But anyways, move on over Starbucks because there’s a new lemon loaf in town, and it does not disappoint. This is truly the BEST lemon loaf recipe. It reminds me more of a lemon pound cake, but one that i can enjoy for breakfast without crashing & feeling like crap after. It only uses a few simple ingredients, but the taste is absolutely incredible.

RECIPE

Ingredients:

1/3 cup softened coconut oil
3/4 cup almond milk
Juice of 1 fresh lemon
3/4 cup coconut sugar
2 tbsp maple syrup
2 cups almond flour
3 tbsp coconut flour
1 tsp baking soda
1 1/2 tsp baking powder
Lemon zest
Coconut lemon glaze: I eyeballed this but i mixed 1 container of plain coconut yogurt (Harmless Harvest is my fav) with melted coconut oil, maple syrup, and fresh squeezed lemon juice

Directions:

  1. Using a hand mixer, beat together oil, milk, lemon juice, sugar, and maple syrup until smooth.

  2. Slowly fold in remaining ingredients and mix until combined. Be sure to not overmix!

  3. Pour into a parchment-lined loaf pan and bake at 375 for 40-45 minutes. Let cool completely before topping with glaze.
