Vegan Chocolate Chip Cookies


They’re buttery. They’re crispy on the edges. They’re soft in the center. They’re melt-in-your-mouth good. Need I say more?

Try these delicious chocolate chip cookies out!

RECIPE:

Ingredients:

1 flax egg (1 tbsp flaxseed + 2 tbsp water, let sit for a few minutes to thicken)
1/4 cup softened coconut oil
2/3 cup coconut sugar
1 tsp vanilla
2 cups almond flour
1 tsp arrowroot powder (sub corn starch)
1 tsp baking soda
Lots of your favorite vegan choc chips. Sorry, this is something I refuse to measure.

Directions:

  1. Using a hand mixer, combine egg, oil, sugar, and vanilla until smooth.

  2. Stir in remaining ingredients and continue to mix until a dough forms. Put dough in the refrigerator for at least 30 minutes.

  3. Roll dough out into even sized cookies and bake at 350 for 12 minutes, or until edges are golden.
