Toasted Pine Nut Hummus
The thickest, creamiest, most gut friendly hummus!
Hummus is one of my favorite foods because it’s so delicious and even more versatile. Use it as a dip, dressing, sauce, marinade - the options are infinite.
It’s also really difficult to find a good quality hummus at the grocery store, especially without breaking the bank. Most store bought versions are made with not so great ingredients, which is why homemade is honestly the way to go. It’s cheaper, faster, and tastes SO much better than anything sitting on the shelves. My biggest struggle with hummus is that they’re all made with garlic, which is a very ~unfriendly~ food for me. So, I decided to make my own without any garlic and it turned out incredible.
This recipe makes for the thickest, creamiest, gut friendliest hummus - if you can tolerate legumes of choice. I went for a toasted pine nut variation because that’s my favorite, but made it without any of the inflammatory ingredients that are typically in the store bought version.

RECIPE:
Ingredients:
2 cans organic chickpeas, rinsed & drained
1/4 cup aquafaba (liquid from can of chickpeas)
1/4 cup creamy tahini
1/4 cup olive oil
2 tbsp toasted pine nuts
2 tbsp fresh lemon juice
Salt & pepper to taste
Optional: garlic, cumin, roasted red pepper
Directions:
Add all ingredients to a high speed food processor and pulse until thick and fully processed.
Top with additional toasted pine nuts and olive oil.
