Cookie Dough Stuffed Dates
Name your ideal date, mine is stuffed with cookie dough.
Dates are an incredibly nutrient dense, bio-available food medicine that supports digestion, heart health, and brain function. They’re rich in fiber, B vitamins, magnesium, trace minerals, and many other essential nutrients. They’re also a great source of natural antioxidants to lower oxidative stress and fight free radicals in the body. And, dates have been shown to be especially beneficial for pregnant and postpartum women by easing the labor process, which is why I made these. Not a mom, just an ~educated~ aunt!!!
Because of their fiber content, dates have also been shown to aid in blood sugar regulation. Since they’re naturally so sweet, they’re a great snack option to satisfy your afternoon sweet tooth, while also minimizing your risk of crashing shortly after. For optimal blood sugar balancing effects, pair them with a protein and fat source - or just make these cookie dough stuffed ones.
They’re high in protein and healthy fats, they’re so simple to make, and they’re the yummiest way to satisfy your sweet tooth on a busy day. Feel free to double or triple the recipe and keep them in the freezer for a quick and easy snack to enjoy throughout the week!

RECIPE:
Ingredients:
1 package of pitted medjool dates
1/2 cup almond flour
2 tbsp plant based protein (sub more flour)
1/3 cup almond butter
2 tbsp maple syrup
100% dark chocolate of choice
Directions:
Cut dates lengthwise, but not all the way through. Mix almond flour, almond butter, and syrup in a bowl until a thick dough forms. Stuff dates with a hefty scoop of dough and freeze for 30 minutes.
Dip in melted dark chocolate and freeze again until hardened. Store in an airtight container in the fridge or freezer.
