Oatmeal Date Breakfast Cookies


Cookies for breakfast?!?

Another recipe with dates because absolutely no food waste over here. So if you already made the cookie dough stuffed dates and still have some leftover, put them to use and make these cookies. The best way I can describe them is as a cross between cookies and granola, but packed with essential nutrients and gut healing ingredients.

These cookies are filled with prebiotics, fiber, healthy fats, and collagen protein to nourish the gut, and of course a little natural sweetness to nourish the soul. They’re a great addition to a morning yogurt bowl or other protein rich breakfast, or as an easy on-the-go snack. And for another blood sugar balancing tip, try to pair them with a protein source, since collagen isn’t a complete protein, to keep your energy stable and your body satiated.

I’ve actually been making these cookies very often since first posting the recipe on Instagram, because so many people reached out asking me to make them for them. RECIPE

Ingredients:

  • 1/3 cup melted coconut oil

  • 1/4 cup unsweetened applesauce

  • 1/2 cup maple syrup

  • 1 tsp vanilla extract

  • 1 cup almond flour

  • 1 1/2 cups gluten free rolled oats

  • 1 tbsp cinnamon

  • 1 scoop Ancient Nutrition multi collagen (code tasteswithgrayce20)

  • 2 tsp baking powder

  • 1 tsp baking soda

  • Chopped medjool dates

  • Chopped raw walnuts

  • Shredded unsweetened coconut flakes

Directions:

  • Combine oil, applesauce, syrup, and vanilla in a large bowl until combined. Stir in remaining ingredients and mix until a dough forms. Refrigerate for at least 30 minutes, or until chilled.

  • Roll dough into balls and bake at 350 for 10-12 minutes. Let sit on the baking sheet to firm up and cool completely before removing.
